Follow Your Bliss
Ok, as a chef and health conscious mother, I feel inclined to start posting recipes for other gluten-free, organic people out there. I came to the realization that I'm gluten sensitive when m step-son's therapist suggested we eliminate grain from his diet to encourage his latent frontal lobe brain development. We all gave up gluten and sugar. Mind you, that's 2 overweight adults and 3, 5-6 year old kids giving up PB & J, mac and cheese, pizza, cake, etc. I should be in the running for "Mother of the Year" for that change alone! But the great thing was, I stopped having the stomach pains and cramping I had suffered from my whole life. I became more regular and though I wasn't losing weight, I felt much better; healthier, more energy.
When that relationship ended, I realized I had gained the knowledge that would bring me health and fitness for life. Now, I'm on a mission to let go of the weight I've carried with me my whole life and focus all I've learned on me and my daughter.
I hope this reaches anyone looking for tasty food without wheat or corn syrup. I try to stay low on the glycemic index, but desserts in moderation for kids, especially, can be part of a healthy life, too.
