Red Quinoa and Sprouted Bean Summer Salad
The sprouted beans and lentils give this salad a perfect sweetness and crunch. For those of you who don't know about quinoa, it's known as "The Super Grain" because it's the only "grain" (actually a sprouted seed) that's a complete protein.
1 cup red quinoa, rinsed
2 cups water
pinch of salt
1 basket of cherry tomatoes, halved
1/2 bunch of parsley chopped
1/2 cucumber, peeled quartered and chopped
2 ribs of celery chopped small dice (3 strips per rib, chopped)
1/2 c. sprouted beans (I use a bean and lentil mix)
3 green onions, thinly sliced
1/4 c. vinaigrette dressing
1/4 c. garlic herb goat cheese, in chunks (optional)
S & P to taste
Cook quinoa and cool. Mix all ingredients in a bowl, season to taste and enjoy!
