Coconut Almond Delights?
As long as I have been making these, I haven't found a good name, but a family could live for a week off a batch... okay maybe a slight exaggeration, but you know what I mean. ;) They'll keep for a few weeks in the fridge and longer in the freezer. The key ingredient is Coconut Butter. I've only found one company to make this: Artisana
1 jar Almond Butter
1 jar Coconut Butter
2 c. Coconut Flour
2 c. ground almonds
3 tbs Agave
3 c. toasted coconut flakes (optional)
Optional additions:
sesame seeds
coconut nibs
chocolate coating
Mix all but the toasted coconut in a large bowl. Form into small balls and roll in toasted coconut. Store in an airtight container in the fridge for up to 4 weeks and months in the freezer.
Enjoy for snack, or as a meal replacement when you're on the go. You'll be surprised how long one of these will tide you over.
