Cheater!
Ok, I'll admit it: We eat gluten. There, I said it. That said, I invite you to read on; knowing I am human and make mistakes. What I can tell you is I have never been tested for gluten intolerance, but when I eat it - WHOOOIE! - It turns me inside out. It's excruciatingly painful and gross, so I won't go into the goriness, BUT it only inspires me more to get GF recipes out there and available... maybe even start a FREE BAKERY CHICO or something.
I have no doubt whatsoever that gluten causes disease. For many reasons, but mainly because the human body isn't conditioned to process synthetically processed foods. Sure, we get the calories and recommended dailies, but that doesn't make it healthy. The body is tricked into laziness and fails to efficiently process. Stuff builds up and then one day: BAM. Like a ton of bricks.
So, if all goes well, I'm on a mission to create a decent gf sour baguette. Pain Levain, which is my absolute favorite, will be challenging since it gets some of its country texture and flavor from rye flour which has a very distinct flavor.
Wish me luck! I'll post the ice cream recipe as soon as I make it through the first week of school. :)
