Easy as pie...
So, it's been a long time since I have blogged and it took me cooking for a Girl Scout Jamboree weekend to inspire me to get back on it. I try to keep things organic as much as I possibly can, but there are a number of excellent mixes I use for day to day or quick baking. Feeding a group of 15, mostly 9 year olds, I made GF Chocolate Cupcakes (one of the girls was celebrating her birthday), mini GF Blueberry Muffins, and Organic GF Spaghetti for our weekend camp out.
All of the girls loved the Jamboree and the food! When I told them the cupcakes and muffins were gluten free, they were shocked!! It felt good to share that with other people, kids, and get such a positive response. For a long time gluten-free baking has had a bad rap. We are finally gaining some headway in this and I saw that first hand with my Brownie Troop last weekend.
I'm planning on making a gf apple pie with the leftover apples. I'll post recipes soon.
