GF/DF Asian Chicken Noodle Soup

With temperatures lower than they've ever been here in Northern California, I turn to the warming restorative nourishment of soup. It warms the body mind and spirit. You can imagine my jubilation when I saw that Trader Joe's now carries Korean rice noodles. Hallelujah!
This soup has an Asian flair with a heavy dose of fresh ginger and green onions.

Ingredients:

1 quart organic chicken stock
2 inch chunk fresh ginger, peeled and sliced thin
3 cloves of garlic, peeled
3 whole green onions
1 large carrot, peeled and sliced
6 mushrooms, quartered
1/2 # organic raw chicken tenders
1 package fresh rice noodles
Salt to taste

Preparation:
Heat stock in a pot on medium high. Add ginger, garlic, green onion, carrot, mushrooms and chicken. Turn heat down to medium when it boils. Cook gently until chicken is done. Add the noodles three minutes before serving. Enjoy!
